Pepper, Sweet ‘Pimento Red’

Thick-walled and heart-shaped, very sweet, not hot. This pepper is an ingredient in the common food eaten mostly in the Southern United States — pimento cheese. Pimento cheese is good on crackers or celery. Drying these peppers produces soft, meaty pieces that are excellent when added to soups in the winter.
