Aromatic light green leaves have a slightly bitter, mint flavor. Blue or violet flowers bloom June to August. Attracts butterflies. Good in borders and as clipped border hedge. Blooms summer through fall. Hyssop is used as a spice herb due to its specific minty odor, pungent taste, and preservative and digestive properties. Essential oils of the plant are applied as flavoring agents in teas, soft drinks, candies, various snacks, chewing gum, baked goods, ice creams, frozen meals, alcoholic beverages, liqueurs and aperitifs.
