Harvest your own tender artichokes! Big flower buds that form at the tops of stalks may be cut for eating. If not cut, buds open to spectacular purple, thistle-like flowers, great for arrangements. Edible flower buds (chokes) grow to 3 or 4 inches, are green in color, and are made up of thick fleshy scales and solid centers (hearts). If flower is left on plant and it goes to bloom it becomes inedible.
